Gammon steaks with caramelized onion and apple

2 | Red onions; finely sliced | |

1 | Red skinned apple; cored, quartered | |

; root ginger, peeled | ||

1 | tablespoon | Soft light brown sugar |
1 | tablespoon | Red wine vinegar |
2 | tablespoons | Water; (2 to 3) |

1 | 225 gram pac tendersweet lightly smoked gammon | |

Directions
Heat the oil and butter in a frying pan, add the onions and apple slices and gently fry until they become golden brown and caramelized. Stir occasionally, takes approximately 10-15 minutes.
Squeeze the grated root ginger over the onions and apples extracting all the juice, and stir in.
Add the sugar, vinegar and water with seasoning to taste and allow to simmer for 1-2 minutes. Reduce the heat to low and keep warm, stirring occasionally.
Cook the gammon steaks following instructions on the pack and serve with the sauce.
Notes Accompany with creamed mashed potato and a green vegetable.
