Petite beef steaks w/caramelized onions

Ingredients

2 | Beef loin steaks 1 inch thick | |
1 | tablespoon | Vegetable oil |
1 | large | Or 2 medium onions cut into thin wedges about 3 cups |
1 | tablespoon | Sugar |
1 | teaspoon | Grated fresh ginger root |
1 | teaspoon | Dried rosemary crushed |
4 | teaspoons | White wine vinegar |
Salt and pepper |
Directions
Heat oil in large frying pan over medium heat. Add onions, sugar, ginger and rosemary. Reduce heat to medium low; cook and stir occasionally, 15-20 minutes, or until onions are golden brown.
Increase heat to medium; add vinegar. Cook and stir until vinegar is evaporated and onions are glazed. Meanwhile, cut each beef top loin steak crosswise in half. Place steaks on rack in broiler pan so surface of meat is 3-4 inches from heat. Broil 15-20 minutes to desired degree of doneness, rare or medium, turning once. Season steaks with salt and pepper; top with caramelized onions.
