Ginger glazed beets

¼ | cup | Packed light brown sugar |
2 | tablespoons | Chopped crystallized ginger |
½ | teaspoon | Salt |
4 | eaches | 16 oz cans or jars whole beets, drained |
Directions
From 2 oranges, grate enough rind to equal 1 tablespoon and equeze enough juice to equal 1 cup. In 2-qt. saucepan, mix orange juice, brown sugar, ginger and salt; over high heat, heat to boiling.
Reduce heat to medium; cook, stiring occasionally, until mixture thickens, about 10 minutes. Gently stir in beets; heat through. Cut remaining orange into thin slices; cut each slice in half. Spoon beets onto platter. Arrange orange slices aroud beets and sprinkle beets with orange peel. Makes 6 accompaniment servings. Shared by: Marie Culver
