Granita di limone (lemon water ice)

4 larges Lemons
½ cup Sugar
2 cups Water

Directions

Wash one lemon and pare the rind thinly with a potato peeler. Heat the sugar and water gently until the sugar has completely dissolved, then add the rind and boil for 5 minutes exactly. Strain and leave until cold. Squeeze the juice from all 4 lemons, strain into the syrup and mix. Pour into an ice cube tray and freeze until firm.
