Grapefruit harvest beets

Ingredients

16 | ounces | Beets, tiny whole or sliced |
2 | tablespoons | Sugar |
1 | tablespoon | Cornstarch |
¼ | teaspoon | Salt |
¼ | cup | Grapefruit juice |
2 | cups | Grapefruit sections; drained |
Directions
Drain beets, and reserve juice. Combine sugar, cornstarch, and salt in saucepan. Combine beet juice and grapefruit juice; stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil. Let boil 30 seconds. Add beets. Heat to serving temperature; remove from heat. Add the grapefruit sections. Serve hot.
