Grapefruit harvest beets

Ingredients

16 ounces Beets, tiny whole or sliced
2 tablespoons Sugar
1 tablespoon Cornstarch
¼ teaspoon Salt
¼ cup Grapefruit juice
2 cups Grapefruit sections; drained

Directions

Drain beets, and reserve juice. Combine sugar, cornstarch, and salt in saucepan. Combine beet juice and grapefruit juice; stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil. Let boil 30 seconds. Add beets. Heat to serving temperature; remove from heat. Add the grapefruit sections. Serve hot.
