Green chili rice

Ingredients

Quantity Ingredient
4 cups Cooked rice
1 Stick butter
1 cup Onion, chopped
½ pint Cottage cheese
½ pint Sour cream
Salt and pepper to taste
cup Coby/Jack cheese, grated
2 Green (4 oz ea) chiles, drained and chopped
1 Jalapeno pepper, chopped fine

Directions

Saute onion in butter. Add onion to cottage cheese, sour cream and then add rice. Place ½ of the mixture in a casserole dish. Sprinkle on green chilies, jalanenos and grated coby/jack cheese. Add rest of rice and top with another layer of the cheese and chilies. Bake at 350 F. for 20 to 30 minutes until hot and cheese is melted.
