Green spinach, pine nut and mushmom salad

Ingredients

250 grams Mushrooms
½ cup Vinaigrette
1 bunch Endive
1 each Head lettuce
Spinach, washed, stems removed and large leaves shredded
2 tablespoons Toasted pine nuts
½ cup Chopped spring onions
1 each Avocado, sliced (optional)
Extra vinaqrette

Directions

Marinate mushrooms in vinaigrette for 2 hours. Just before serving, tear endive and lettuce into pieces and place in a bowl with mushrooms and spinach. Add pine nuts, spring onions and avocado.
