Green tea salad dressing

1 | teaspoon | Caster sugar |
2 | Strips lemon zest | |
Salt and freshly ground black pepper | ||
2 | tablespoons | Hazelnut oil |
2 | teaspoons | White wine vinegar |
Directions
Infuse the tea leaves in the hot water (don't use boiling water) for 5 minutes then strain into a pan. Add the sugar and bring to the boil and simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon zest and leave to infuse until cold.
Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid and whisk.
