Grilled salmon with creamy pesto^

Ingredients

Quantity Ingredient
2 cloves Garlic, sliced
½ cup Fresh parsley, packed
½ cup Fresh basil leaves, packed
½ cup Low or nonfat sour cream
3 tablespoons Skim milk
¼ cup Soy sauce, divided
1 tablespoon Shredded Parmesan
2 tablespoons Vegetable oil
2 pounds Salmon fillets, cut in 6

Directions

Blend garlic, parsley and basil; add sour cream, milk, 1 tablespoon soy sauce,

and cheese. cover and process until smooth.

Mix remaining soy sauce and oil, brush on fish. Grill until fish flakes easily

with a fork.

Warm pesto; spoon on salmon.

Salmon may be broiled.
