Ham frittata

8 ounces Egg Substitute
½ cup Lean Ham
1 tablespoon Dijon Mustard
1 teaspoon Parsley Flakes
1 teaspoon Black Pepper
1 cup Potatoes; cubed
¼ cup Sliced Mushrooms
2 tablespoons Green Pepper; chopped

Directions

Preheat broiler. In bowl, combine egg product, ham, mustard, parsley and black pepper. Set aside.

Preheat skillet, sprayed with vegetable oil spray, over medium heat.

Saute potatoes, mushrooms and green pepper until tender, stirring occasionally. Pour egg product mixture over vegetables. Cook four to five minutes or until bottom of skillet is set.
