Healthy eggnog

1 | pint | (16 oz.) egg substitute; thawed |
1 | quart | Skim milk |
1 | cup | Granulated sugar |
1 | teaspoon | Ground nutmeg |
½ | teaspoon | Ground allspice |
1 | teaspoon | Vanilla extract |
1 | tablespoon | Rum extract (or 1 cup dark rum or bourbon) |
1 | Container (12 oz) Cool Whip Lite |
Directions
Here's a very healthy (i.e. no fresh eggs and much less fat). It was developed by a local chef, Michael Moskwa, and is delicious. I've been making for the holidays for the past 3 or 4 years.
Place egg substitute, milk, sugar, nutmeg and allspice in a large mixing bowl and whisk until frothy. Add vanilla and rum extracts (or liquor) and whisk again. Gently fold in well-thawed Cool Whip until fully blended.
Chill well. Makes 12 6-oz. servings with 165 calories and 3 grams fat.
(Note: a plain glass of whole milk is equal in calories and has 4 grams fat).
