Holiday snow peas

Ingredients

Nonstick cooking spray
¼ pounds Fresh snow peas; stem and strings removed -=OR=-
2 packs (6 oz)frozen snow peas;
2 Scallions; trimmed & sliced
2 ounces (1 jar) pimentos; drained
1 tablespoon Sherry -=OR=-
1 tablespoon Sherry vinegar;

Directions

Spray a wok or nonstick skillet lightly with cooking spray. Place snow peas and scallions in the wok or skillet, and stir-fry over medium-high heat, stirring constantly for 2 minutes. Add pimentos and sherry. Stir-fry one minute longer. Peas should be bright and crisp. Serve hot.
