Hominy souffle

Ingredients

Quantity Ingredient
1 cup Milk
1 cup Water
½ cup Hominy grits
2 tablespoons Butter,melted
¾ teaspoon Salt
3 Egg,separated,well beaten

Directions

1. Scald milk and water in the top of a double boiler.

2. Add hominy grits, stirring until thickened; cook 1 hour.

3. Cool; add butter, salt and egg yolks, blending well.

4. Gently fold in stiffly beaten egg whites.

5. Pour mixture into a well-buttered casserole; bake in preheated 325'F. oven 45 minutes.
