Honey-baked lentils

Ingredients

16 | ounces | Lentils |
1 | teaspoon | Mustard, dry |
¼ | teaspoon | Ginger, ground |
1 | tablespoon | Soy sauce |
½ | cup | Onion; chopped |
1 | cup | Water |
6 | slices | Bacon |
½ | cup | Honey |
Directions
Simmer lentils 30 minutes in enough water to cover. Combine mustard, ginger, soy sauce, onion, and 1 cup water; stir into cooked lentils.
Cut bacon into 1-inch pieces. Stir two-thirds of bacon into lentils; sprinkle remainder over the top. Pour honey over all. Cover tightly. Bake at 350 degrees for 1 hour. Uncover last few minutes to brown the bacon.
