Hot and spicy pumpkin chutney

Ingredients

Quantity Ingredient
Makes 5 jars
4 cups Cooked pumpkin pulp
cup Dark brown sugar
cup Malt vinegar
½ cup Coarse-chopped onion
½ cup Coarse-chopped raisins
3 eaches Jalapeno peppers, seeded and chopped
2 tablespoons Fine-chopped garlic
2 tablespoons Grated fresh ginger root
1 teaspoon Salt

Directions

Place all ingred.'s in large saucepan & bring to a boil. Reduce heat and simmer 45 minutes or until thick. Ladle chutney into hot sterilized half-pint jars leaving ½-inch headspace. Wipe rims clean. Apply lids according to manufacturer's directions and process in boiling water bath for 10 minutes.
