How to marinate sun-dried tomatoes+

Ingredients
Quantity | Ingredient | |

15 | Sun-Dried tomatoes | |
¼ | cup | Extra Virgin Olive Oil or enough to cover tomatoes |
2 | larges | Garlic cloves, sliced |
4 | larges | Leaves basil or fresh thyme sprigs |
Directions
1. Pour boiling water to cover over the sun-dried tomatoes and cook for 2 minutes. Remove from the heat, cover and let stand for 2 to 3 minutes; drain.
2. Place rehydrated tomatoes in a bowl and layer with remaining ingredients, then pour olive oil over all.
3. cover and let marinate at room temperature for at least an hour, or refrigerate for up to 5 days.
One suggestion for serving: Spread thinly sliced baguettes, liberally with either chevre or cream cheese. Top with a julienne of marinated sun-dried tomatoes,(above), and a bit of chopped basil.
