Huevos rancheros (very basic recipe)

Enough scrambled tofu (lowfat) mix to serve two
1 can (15-oz) black beans
2 Low fat flour tortillas
1 cup Salsa

I got this recipe from this list, but I don't remember who sent it in. I put so much stuff in it that I end up making a lot more than enough for two - it serves my husband, myself, 2 teenagers, & we still have leftovers! Everyone loves it. I always make it with LF tofu because we follow McDougall & my son's a vegan too. Here it is: Warm tortillas in oven using a very low temp. Meanwhile, drain & rinse beans & heat thru. Also meanwhile, scramble the egg whites or tofu mix in a nonstick pan. Take the warm tortillas, spread flat on plate. Cover each one with black beans & top with salsa, then top with egg whites or tofu.

Variations: Use pinto beans or fatfree refritos. Add corn, bell peppers, onion, mushrooms any other veggies. Add diced green chiles. Melt fatfree cheese or soy cheese on top. Take a baked potato, slice into thin rounds, & broil in oven until they are crisp - then add to the dish. Or instead of potatoes, use banana slices (don't broil them) - they taste wonderful. Add a dollop of FF sour cream or yogurt. Or anything else you can think of.
