Individual swiss steaks

Ingredients

1 | Round steak; cut 3/4\" thick | |
¼ | cup | Flour, all-purpose |
2 | teaspoons | Salt |
⅛ | teaspoon | Pepper |
3 | tablespoons | Shortening |
⅛ | teaspoon | Thyme |
1 | medium | Onion; sliced |
½ | cup | Celery; sliced |
16 | ounces | Tomatoes; canned |
Directions
Cut steak int 4 pieces. Combine flour, salt, and pepper; Pound seasoned flour into steaks. Brown in shortening. Pour off drippings. Add thyme, onion, celery, and tomatoes. Cover tightly and cook slowly for 1-½ to 2 hours or until meat is tender. Thicken liquid for gravy, if desired.
