Island sweet potato pudding

12 | ounces | Cooked sweet potatoes, peeled and cut in chunks |
1 | medium | Ripe banana, mashed |
3 | teaspoons | Firmly packed brown sugar |
2 | tablespoons | Plus reduced calorie margarine |
¼ | teaspoon | Ground nutmeg |
1 | teaspoon | Rum extract |
1 | Egg white |
Directions
Preheat oven to 350. In a large bowl, beat all ingredients except egg white until smooth. Add a small amount of water if necessary, to get a smooth consistency. Beat egg white until stiff. Fold gently into sweet potato mixture. Spoon into a casserole that has been sprayed with a nonstick cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.
