Island sweet potato pudding

12 ounces Cooked sweet potatoes, peeled and cut in chunks
1 medium Ripe banana, mashed
3 teaspoons Firmly packed brown sugar
2 tablespoons Plus reduced calorie margarine
¼ teaspoon Ground nutmeg
1 teaspoon Rum extract
1 Egg white

Directions

Preheat oven to 350. In a large bowl, beat all ingredients except egg white until smooth. Add a small amount of water if necessary, to get a smooth consistency. Beat egg white until stiff. Fold gently into sweet potato mixture. Spoon into a casserole that has been sprayed with a nonstick cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.
