Directions
Prepare Cheddar Muffins, substituting ¼ C masa harina or yellow corn flour for ¼ C of the flour and omitting the Cheddar and chives.
Fold in 1 small red jalapeno pepper, stem, ribs, and seeds removed and discarded, finely chopped, 1 C fresh or frozen yellow whole-kernel corn, and 1 T chopped cilantro before spooning into cups. Serve immediately; store any left- over muffins in the refrigerator and reheat before serving.
