Jamin' ripe summer peaches and berries

Ingredients

4 | cups | Peeled; pitted peaches |
1¼ | cup | Sugar |
½ | cup | White raisins |
1 | cup | Ripe raspberries or blueberries |
¼ | cup | Fresh lemon juice |
Directions
Put the peaches and sugar into a non-reactive pot. Place over medium heat and stir the peaches to coat them evenly with sugar. Cook for 10 to 12 minutes. Smash the peaches against the sides of the pot and continue to cook until all the sugar has dissolved and the peaches are turning soft.
Cook for an additional 12 to 15 minutes. Add the raisins and berries and stir to combine. Cook 2 minutes before adding the lemon juice. Taste carefully and add additional lemon juice if desired. Cool and transfer to covered storage containers. Keep refrigerated. This recipe yields 3 cups.
