Jim's garlic salad

Ingredients

6 | eaches | Cloves Elephant Garlic |
1 | cup | Red bell pepper, chopped |
1 | each | Small onion, chopped |
4 | cups | Salad greens |
½ | cup | Cheese, cubed (mixed) |
½ | cup | Celery, diced |
1 | each | Can mandarin oranges |
¼ | cup | Radishes, sliced |
Directions
In a saute pan, pour in enough water to cover the garlic cloves.
Simmer for 10 minutes, drain and cool the cloves. Arrange the lettuce on a platter, toss together the veggies and cheese. Slice the cloves thin and toss in with the veggies. Top lettuce with the veggy mixture and oranges.
