Joyce moore's honeydew melon soup
1 servings
Ingredients
Quantity | Ingredient | |
---|---|---|
1 | large | Honeydew melon |
1 | Ripe mango | |
8 | ounces | Vanilla flavor or non fat yogurt |
2 | Limes | |
1 | cup | Honey |
1 | Sprig fresh peppermint |
Directions
Cut up melon into pieces. Cut up mango into pieces. Juice the limes. Into a food processor puree the melon and the mango. Add the lime juice. Transfer to a blender and "liquefy" (this is only necessary if the food processor leaves the melon too coarse).
Remove to a large bowl. Add the yogurt, mix together. Add the honey slowly to sweeten to taste. (If Honeydew melon is not real sweet tasting, the soup will not be sweet enough and you will then need to add a couple of packets of sugar substitute).
Garnish servings with peppermint. Serve immediately or chill and serve later.
