Kikkoman beef & tomato stir-fry salad

1 | tablespoon | Cornstarch |
4 | tablespoons | Kikkoman Soy Sauce, divided |
½ | teaspoon | Sugar |
1 | each | Clove garlic, pressed |
1 | tablespoon | Red wine vinegar |
1 | tablespoon | Tomato catsup |
3 | tablespoons | Vegetable oil |
1 | teaspoon | Onion powder |
4 | cups | Shredded iceberg lettuce |
2 | eaches | Stalks celery, cut diagonal |
Into thin slices | ||
1 | each | Green pepper, julienned |
2 | teaspoons | Minced fresh ginger root |
15 | eaches | Cherry tomatoes, halved |
Directions
Cut beef into thin strips. Combine cornstarch, 2 tablespoon soy sauce, sugar and garlic; stir in beef. Let stand 15 minutes. Meanwhile, combine remaining soy sauce with vinegar, catsup, 1 tablespoon oil, onion powder and 2 tablespoons water; set aside. Line large platter or bowl with lettuce. Heat 1 tablespoon oil in hot wok or large skillet over high heat. Add beef and stir-fry 1 minute; remove. Heat remaining oil in same pan. Add next 3 ingredients; stir-fry 1 minute.
Remove pan from heat; stir in tomatoes beef and soy sauce mixture.
Spoon mixture over lettuce; toss well to combine.
