Kiwi fruit and shrimp saut

Ingredients

Quantity Ingredient
3 Kiwi fruits (up to)
3 tablespoons Olive oil
1 pounds Shrimp; peeled
3 tablespoons Flour
¾ cup Prosciutto or thinly sliced sandwich ham; cut into thin strips
3 Shallots; finely chopped (up to)
teaspoon Chili powder
¾ cup Dry white wine

Directions

Peel kiwi. Reserve 4 slices for garnish and chop remaining fruit. In a heavy skillet or wok, heat oil. Toss shrimp in flour and saut‚ 30 seconds.

Add Prosciutto, shallots and chili powder. Saut‚ another 30 seconds. Add the chopped kiwi and saut‚ 30 seconds. Add wine and reduce by half . Serve immediately. Yield: 4 servings.
