Layered fruit and prawn salad

Ingredients

Quantity Ingredient
1 Ripe Galia melon; quartered and seeds
; removed
1 large Ripe mango; peeled and sliced
1 200 gram pac extra large prawns; defrosted
4 tablespoons Natural Greek yoghurt
1 tablespoon Tomato or sun dried tomato puree
2 tablespoons Milk
Salt and freshly ground black pepper
2 tablespoons Freshly chopped coriander

GARNISH

Remove the flesh from the melon quarters in one piece and cut widthways into 4-5 slices. Layer the melon with the sliced mango to form a semi circle on four plates.

Divide the prawns into each semi circle of fruit.

Mix together the dressing ingredients and pour over one side of the fruit to form an attractive pattern. Sprinkle with coriander and refrigerate until required.
