Lima mash with lemon and olive oil

Lemon juice to taste | ||
Salt and pepper to taste | ||

Directions
GARNISH
Put lima beans, garlic and salted water in a medium saucepan. Bring to a boil over medium-high heat. Cover, lower heat, and simmer for about 15 minutes or until beans are very tender. Coarsely pure beans and garlic in a food processor. Transfer to a small bowl and gradually beat in 3 tbs olive oil. Add lemon juice to taste, then season with salt and pepper. SErve on country-style bread. Drizzle with a little olive oil and garnish with lemon zest.
