Mixed vegetables with lemon

Ingredients

1 500 g pack special mixed vegetables
6 tablespoons Olive oil
4 tablespoons Water
1 Lemon; grated rind and
; juice
2 teaspoons Fresh thyme; chopped
Salt and freshly ground black pepper

Directions

Put the vegetables in a large saucepan with the olive oil and water.

Add the grated lemon rind, half the juice, the thyme and seasonings and simmer for 5 minutes.

Remove from the heat, add the rest of the lemon juice and serve.
