Lime-broiled chicken

½ cup Canola oil
½ cup Lime juice
2 tablespoons Minced onion
1 teaspoon Fresh tarragon (or 2 teaspoons dried)
¼ each To 1/2 teaspoon Tabasco sauce
8 eaches To 9 pounds skinless chicken breasts
Salt and pepper

Method: Mix oil, juice, onion, tarragon and Tabasco. Season chicken with salt and pepper. Arrange in 1 layer on broiler rack. Brush with sauce. Broil slowly about 6 inches from heat, turning and brushing on more sauce often, till chicken is done.
