Lime-broiled chicken

½ | cup | Lime juice |
2 | tablespoons | Minced onion |
1 | teaspoon | Fresh tarragon (or 2 teaspoons dried) |
¼ | each | To 1/2 teaspoon Tabasco sauce |
8 | eaches | To 9 pounds skinless chicken breasts |

Method: Mix oil, juice, onion, tarragon and Tabasco. Season chicken with salt and pepper. Arrange in 1 layer on broiler rack. Brush with sauce. Broil slowly about 6 inches from heat, turning and brushing on more sauce often, till chicken is done.
