Lobster rolls - country living

Ingredients

½ cup Finely chopped celery
cup Mayonnaise
1 tablespoon Chopped fresh basil or parsley leaves
1 tablespoon Lemon juice
½ teaspoon Ground black pepper
¼ teaspoon Salt
2 To 3 drops hot red-pepper sauce (opt.)
2 cups Cooked lobster meat (about 2 1 3/4-lb lobsters)
4 Frankfurter rolls
4 Lemon wedges (opt.)
Coleslaw (opt., separate recipe)
Yankee Fries (opt., separate recipe)

Directions

1. In medium-size bowl, combine celery, mayonnaise, basil, lemon juice, black pepper, salt, and red-pepper sauce, if desircd. Fold in lobster until combined; cover and refrigerate at least 20 minutes.

2. To serve, split rolls and toast until golden. Divide lobster mixture among rolls and serve with lemon wedges, Coleslaw, and Yankee Fries, if desired.
