Low-fat rice pudding

Ingredients

Quantity Ingredient
2 eaches Egg whites
1 each Egg
2 cups Cooked rice
½ cup Sugar
½ cup Raisins
2 cups Skim milk
½ teaspoon Vanilla
¼ teaspoon Ground nutmeg
Ground cinnamon

Directions

Heat oven to 325*. Beat egg whites and egg in ungreased 1½ qt casserole . Stir in remaining ingredients. Spinkle with cinnamon to taste. Bake uncov ered 50-60 minutes, stirring after 30 minutes, until knife inserted halfway between center and edge comes out clean.

Serve warm or cold. Immediately re frigerate any remaining pudding.
