Lowfat brown gravy

2 | tablespoons | Carrot, diced |
2 | tablespoons | Onion, diced |
2 | tablespoons | Tomato puree |
½ | each | Garlic clove |
1 | x | Thyme leaves, dash |
1 | tablespoon | Flour |
2 | tablespoons | Celery, diced |
1 | cup | Beef broth (fat skimmed) |
1 | each | Bay leaf |
1 | x | Pepper, dash |
Directions
Melt margarine. Add flour and cook for 3 minutes. Add vegetables and cook for 5 minutes until lightly browned. Remove from heat and stir in broth. Add remaining ingredients and simmer for 4 to 5 minutes.
Let cool slightly. Remove bay leaf and process in blender until smooth.
