Maple roasted pork and potatoes

1¼ | pounds | New potatoes, quartered |

Directions
cloves garlic. Toss potatoes with the sliced garlic, oil, salt and pepper to taste, in another baking dish, to coat potatoes. 2. Bake both dishes in a preheated 400 degree oven for 50 to 60 minutes or until an instant-read thermometer inserted in pork registeres 160 degrees; potatoes should be tender. 3. Meanwhile, prepare glaze.
Grate and then juice one lemon; place in small saucepan. Chop remaining 2 cloves garlic; add to saucepan along with maple syrup.
Bring to simmering; cook 10 to 12 minutes, until syrupy; set aside.
4. Brush pork roast with glaze every 10 minutes during the last 30 minutes of cooking. Let roast stand 10 minutes before slicing. Serve pork with potatoes and defatted pan juices.
