Ingredients

½ cup Olive Oil
¼ cup Red Wine Vinegar
1 teaspoon Salt
¼ teaspoon Pepper
1 each Clove Garlic, Crushed
1 cup Celery; Chopped
½ cup Red Onion; Chopped
½ cup Green Bell Pepper; Chopped
1 each Jalapeno Pepper; Chopped
30 ounces Black-eyed Peas; Drained,2Cn

Directions

Mix the oil, vinegar, salt, pepper, and garlic then pour the mixture over the remaining ingredients in a large bowl. Cover and refrigerate at least 2 hours but no longer than 24 hours, stirring occasionally.
