Marinated shrimp with corn salsa

12 larges Shrimp
1 Lemon; zest of
4 Garlic cloves - minced
1 Serrano chili - seeded; diced
¼ cup Cilantro - chopped
2 tablespoons Olive oil
Salt and pepper

Directions

Directions: Peel and devein the shrimp, leaving the tails on. In a large bowl toss together the shrimp, zest, garlic, chili, cilantro and oil.

Season with salt and pepper. Cover with plastic wrap and refrigerate for one hour to marinate. To cook, either grill or use your oven preheated to broil and allow to cook about 2 minutes per side or until cooked through.
