Marsha's potato casserole

Ingredients

10 | Boiling potatoes; peeled | |
8 | ounces | Cream cheese; softened |
2 | Eggs; beaten slightly | |
2 | tablespoons | All-purpose flour |
2 | tablespoons | Fresh parsley; minced |
2 | tablespoons | Fresh chives; minced |
1 | can | French fried onions |
Salt and white pepper; to taste |
Directions
In a mixing bowl, mix potatoes until smooth, add cream cheese, beat some more. Blend in eggs, flour, parsley, chives, and seasoning. Turn into buttered casserole, spread onions on top . Bake uncovered @ 325 degrees for 25-30 minutes. May be compounded ahead of time, refrigerated and then baked. Marsha used onions cut into rings, sauteed in butter instead of the french fries. NOTES
: Marsha (Billie Sue's sister) fixed this for a brunch (Easter, 1996). It was delicious!
