Mashed potatoes (taurus)

Ingredients

1½ | pounds | Potatoes (4 medium), peel and cube |
½ | cup | Yellow onion (1 small), finely chopped |
Water, salted | ||
⅓ | cup | Skim milk, warmed |
2 | teaspoons | Margarine |
½ | teaspoon | Salt |
¼ | teaspoon | White pepper |
Directions
Substitutions: "one cup" plain yogurt for ⅓ cup warm skim milk. Unsalted butter for margarine.
In a medium saucepan combine the potatoes and onions with just enough salted water to cover. Bring the water to a boil and simmer, covered, for 15 to 20 minutes or until the potatoes are tender. Drain.
In a large bowl, mash the potatoes and onion with a potato masher; or force them through a ricer into the bowl. Beat in the milk or yogurt, butter, salt and white pepper. Serve 4.
