Mc brown's whole wheat waffles

Ingredients

Quantity Ingredient
2 cups Whole wheat pastry flour
3 teaspoons Baking powder
1 teaspoon Baking soda
½ teaspoon Salt; optional
1 teaspoon Active dry yeast
¼ cup Water
1 teaspoon Honey
½ cup Cooked oat bran*
1 cup Low fat soy milk
1 teaspoon Lemon juice

Directions

*to make 1/2c cooked oat bran, cook 1/4c uncooked oat bran in 3/4c water for 2 mins.

Combine the first 4 ingredients and set aside. Combine the yeast, water, honey, and cooked oat bran and let rest a few mins. Then add the soy milk and lemon juice, mix well, and combine with the dry ingredients. Pour into a hot waffle iron and cook 7 mins.
