Mesclun salad

Ingredients

Quantity Ingredient
¾ cup Orange juice
¼ cup Red wine vinegar
1 tablespoon Parsley, minced
1 tablespoon Chives, minced
1 each Garlic clove, minced
1 teaspoon Dijon
Salt & pepper
1 pounds Mesculun*

Directions

In a small bowl, whisk together the juice, vinegar, parsley, chives, garlic, mustard, salt & pepper. Set aside.

Arrange mesculun on individual salad plates. Just before serving, re-whisk the vinaigrette & dribble a tb or so on each serving.

*Mesculun is simply a generic name for an assortment of wild or baby lettuces. If it's not available, mix several varieties together ensuring that you include arugula (rocket) or watercress for a characteristic spicy taste.
