Microwave snapper provencal

Ingredients

7½ | ounce | Can whole tomatoes, chopped |

¼ | cup | Chopped green pepper |
¼ | cup | Chopped onion |
¼ | cup | Chopped parsley |
1 | small | Clove garlic, crushed |
¼ | teaspoon | Dried whole oregano |
6 | (4 oz) red snapper fillets | |
⅛ | teaspoon | Freshly ground black pepper |
Directions
Combine first 6 ingredients in a 12 x 8 x 2-inch baking dish; stir to distribute vegetables evenly in dish. Cover tightly with heavy-duty plastic wrap; fold back a small corner of wrap to allow steam to escape. Microwave at HIGH 4 minutes, giving dish a half-turn after 2 minutes. Push vegetables to one side of dish, and arrange fish in dish with thickest portions to outside. Spoon vegetable mixture evenly over fish, and sprinkle with pepper. Cover and microwave at HIGH 5 to 6 minutes, giving dish a half-turn after 3 minutes. Cook until fish turns opaque. Let stand, covered, 3 to 5 minutes.
