Minty chicken and kiwi fruit salad

Ingredients

4 Kiwi fruit; peeled and sliced

2 Chicken breasts; cooked and sliced
50 grams Button mushrooms; sliced (2oz)
1 Red pepper; diced
4 tablespoons Mayonnaise
1 tablespoon Freshly chopped mint; up to 2
Salt and freshly ground black pepper
1 Sprig fresh mint

Directions

1. Mix together the kiwi fruit, chicken, mushrooms, pepper, mayonnaise and chopped mint, with seasoning to taste.

2. Transfer to a serving dish and garnish with sprigs of fresh mint.
