Mixed vegetable stir fry in plum sauce

Ingredients

2 tablespoons Oil
500 grams Brussels sprouts; trimmed & halved
1 Red capsicum; seeded and thinly
Sliced
1 Clove garlic; crushed
100 grams Snow peas; trimmed
100 grams Button mushrooms; halved
¼ cup Shallots; sliced
1 tablespoon Fresh coriander; chopped
1 tablespoon Plum sauce

Directions

1 . Heat oil in a wok or large frying pan. Saute brussels sprouts, capsicum and garlic for 2 minutes.
