Three vegetable stir-fry

¼ cup Broth
1 pounds Carrots
2 Zucchini
4 Scallions
1 Green bell pepper
1 teaspoon Tarragon
Salt
Black pepper

Directions

In non-stick frying pan heat broth until very hot. Add carrots, zucchini, scallions & bell pepper. Add tarragon. Stir fry a few minutes until carrots are tender-crisp. Season with salt & pepper to serve.

Approximately 6-8 minutes.
