Mozarella, zucchini and anchovy toasts

Ingredients

Quantity Ingredient
1 tablespoon Olive oil
4 smalls Zucchini, trimmed and sliced
2 tablespoons Parsley, finely chopped
4 slices (large) fresh Italian country bread, 3/4 inch thick
12 slices Mozzarella cheese
8 Anchovy fillets, drained and chopped

Directions

Preheat oven to 400F. Heat olive oil in large skillet over med-high heat.

Add zucchini and parsley and saute' until zucchini is tender, about 5 min.

Remove from heat. Place bread slices on large baking sheet. Bake until crisp, about 10 min. Arrange 3 slices mozzarella on each bread slice. Top with zucchini, dividing equally. Sprinkle with anchovies. Return to oven and bake until cheese melts, about 5 min. Serve hot.
