Mozzarella and zucchini macaroni

Ingredients

Quantity Ingredient
250 grams Spiral pasta
½ tablespoon Olive oil
1 Garlic cloves
250 grams Zucchini
125 grams Grated mozzarella
1 Eggs
Fresh ground black pepper

Directions

Preparation: thinly slice the garlic cloves. Slice the zucchinis into : rounds.

1. Cook the pasta in a large quantity of boiling water until just tender.

2. Heat the oil in a large pan. Add the garlic and cook for 2-3 minutes.

3. Add the zucchini and cook over a medium heat until tender.

4. Drain the pasta and place in a large bowl.

5. Add the mozzarella, eggs and black pepper.

6. Stir to combine. Add the Zucchini and mix gently.

Serve immediately.
