Mushrooms in garlic butter (microwave)

Ingredients

8 larges Large button mushrooms
4 cloves Garlic; crushed
3 tablespoons Fresh lemon juice
Salt & pepper
1 tablespoon Chopped fresh parsley
3 tablespoons Butter
1 each Egg yolk

Directions

Separate the stalks from the caps of the mushrooms, rinse and grind (mince) the stalks in a food processor. Put into a bowl with the garlic and lemon juice. Microwave, uncovered, on High for 3 minutes.

Wipe the mushroom caps with a damp cloth or [paper towel]. Arrange in a circle, face downwards on a plate, leaving the center of the plate empty. Season with salt and pepper. Cover and microwave on High for 5 minutes.

Add the chopped parsley and butter to the pureed mushroom stalks.

Season with salt and pepper. Fill the mushroom caps with the mixture.

Cover and microwave on high for 2 minutes.

Transfer the mushroom caps to a serving dish with a slotted spatula.

Whisk the egg yolk in a bowl and add the cooking liquid from the mushrooms. Microwave on High for 1 minute, stir, pour over the mushrooms, and serve hot.
