Nectarine topped oatmeal muffins

1 | Egg | |
2 | tablespoons | Oil; olive or corn |
⅔ | cup | Old fashioned oats |
1 | large | Nectarine; peeled and diced |
1⅓ | cup | Flour; whole wheat or white |
¼ | cup | Sugar |
1 | tablespoon | And 1/2 teaspoon cinnamon |
1 | tablespoon | Baking powder |
¼ | teaspoon | Salt |

Preheat oven to 400 degrees. Coat muffin tin with non-stick cooking spray.
In large bowl mix together skim milk, egg, oil and oats. Let sit while you peel and dice the nectarine. Set nectarine pieces aside. Combine flour, sugar, 1 teaspoon cinnamon, baking powder and salt together in a separate bowl. Mix together wet ingredients(milk mixture)with dry ingredients(flour mixture). Blend until dry ingredients are just moistened. Do not over mix.
Fill each muffin cup ½ full with batter. Top with nectarines and sprinkle remaining cinnamon on top. Bake muffins for approximately 20 minutes or until slightly brown around muffin edges. Let cool in pan for 5 minutes.
Remove and place on rack until completely cool. Yield: 12 muffins Nutritional information: 125 calories and 3 grams of fat per muffin Nutrient compostion: 1 starch
