Neen's peanut sauce

2 1/2 cups

Ingredients

2 tablespoons Corn oil
½ cup Onion(s), minced
2 Garlic clove(s), minced
1 tablespoon Crushed red pepper flakes
1 teaspoon Ground cumin seeds
¼ cup Soy sauce
3 tablespoons Lime juice
cup Smooth peanut butter
¾ cup Unsweetened canned coconut milk

Directions

Heat the oil in a skillet. Over low heat, saut the onion, red-pepper flakes and cumin for 10 minutes. Don't let the onion or garlic brown.

Stir in the soy sauce and lime juice. Gradually stir in 1 cup of the peanut butter and cup of the coconut milk. Stirring constantly, cook the mixture over low heat for 5 minutes.

Remove from the heat and spoon into a mixing bowl; let cool. With an electric mixture, beat in the remaining cup of peanut butter and the remaining cup of coconut milk. Continue to beat until the mixture is very smooth.
