Nonfat granola

¾ | cup | Brown sugar |
⅓ | cup | Concentrated apple juice; (I use frozen) |
½ | cup | Dry milk |
⅓ | cup | Honey |
2 | tablespoons | Cinnamon; (I use a bit less) |
½ | teaspoon | Salt |
½ | cup | Dried fruit |
Directions
This Non-fat granola is from the book Miserly Moms by Jonni McCoy. I like to add raisins to it when I'm ready to eat it. I've shared it with people at work and they like it really well. It doesn't have the yummy ingredients of the previous 3 granola recipes submitted but just think! No fat, either! In a saucepan, mix and heat the brown sugar, apple juice, and dry milk until the sugar dissolves. I add the honey to this mixture which the original recipe didn't say to do (I don't think it did anyway, I loaned the book out and can't look it up). Combine the dry ingredients in a mixing bowl. Pour the sugar mixture slowly over dry ingredients and blend well.
Place on a cookie sheet and bake at 375 for 20 to 30 minutes, stirring every 10 minutes. (In my oven, I stir more often).
Jonni listed options as: peanuts, sunflower seeds, coconut, sesame seeds, peanut butter or whatever. I wanted mine to be truly non-fat so I didn't add options. One of the gals at work has used old fashioned oats in this recipe. She likes it more chewey. Let me warn you that the liquid mixture looks kind of yucky but it'll be fine in the finished product.
