Oatmeal rolls

2⅓ cup Water -- diveded
1 cup Oatmeal
3 tablespoons Butter or margarine
cup Packed brown sugar
1 tablespoon Sugar
teaspoon Salt
2 packs Active dry yeast -- 1/4 oz

Directions

In a saucepan, bring 2 cups water to a boil. Add oatmeal and butter; simmer 1 min. Removed to large mixing bowl and let cool. Heat the remaining water; add yeast. To the oatmeal mixture add brown and white sugars, salt, yeast mixture and half of the flour. Mix well.

Add enough remaining flour to make a soft dough. Turn out onto a floured board; knead 6 to 8 min. or until smooth and elastic. Add additional flour if necessary. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hr. Punch dough down; divie in half and shape each half into 12 balls. Place 1 in. apart on two greased 13x9 inch baking pans.

Cover and let rise until doubled, about 45 to 60 min. Bake at 350 deg. for 20 to 30 min. Yield: 24 rolls.
